Soups Veggie Pot-Pourri Clear Soup


  • ¼ cup cauliflower (finely chopped)
  • 1 small carrot (finely chopped)
  • 4-5 leaves cabbage (finely chopped)
  • 10-12 spinach leaves (finely chopped)
  • ¼ cup spring onion (finely chopped)
  • 1 big tomato (finely chopped)
  • 1 medium green capsicum (finely chopped)
  • ¼ cup finely chopped french beans
  • 1 tsp grass-fed cow white butter or canola oil
  • 1 tsp finely chopped garlic
  • 1 tsp finely chopped ginger
  • 2 split green chilies
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tbsp. finely chopped spring onion greens for garnish
  • 2 tsp lemon juice
  • 4 cups water
Veggie Pot-Pourri Clear Soup


Heat butter in a wok (kadhai), add ginger, garlic and green chillies. Sauté on medium flame for a few seconds.

Add onions and sauté till transparent.

Add all the vegetables and sauté on medium flame for 2-3 minutes.

Add water and stir.

Add salt and pepper and cook on a medium flame for 3 minutes.

Remove from flame, add spring onion greens and lemon juice and mix well.

Serve hot.
