Heat butter in a wok (kadhai), add ginger, garlic and green chillies. Sauté on medium flame for a few seconds.
Add onions and sauté till transparent.
Add all the vegetables and sauté on medium flame for 2-3 minutes.
Add water and stir.
Add salt and pepper and cook on a medium flame for 3 minutes.
Remove from flame, add spring onion greens and lemon juice and mix well.
